Vintage Notes
The 2021 Vintage had wonderful warm and mild weather during flowering and bloom leading to above average yields and good fruit cluster uniformity. This is our third vintage of producing a Cabernet Sauvignon wine. This particular wine hails from Carmel Valley old vines grown at Joullian Vineyard deep in the rugged Cachauga Mountains. This Cabernet expresses the varietal beautifully in a ripe yet balanced structure that showcases the depth of the microclimate with dusty mineral red and dark fruits and plenty of earth and acidity.

Yield: 2.25 Tons Per Acre harvested by hand, night harvest.

Brix at Harvest: 23-23.8 Brix Alcohol: 13%
Vinification: 100% destemmed whole berry and fermented in small open top fermentor for two weeks.
Yeast: Partial Native yeast and WSY yeast
Oak: Aged 11 months in French Oak Barrels with 30% New French Oak from Sylvain and Tonellerie Nadlie´
Unfined and Unfiltered
Less than 250 cases produced
